Blackberry Cobbler

Ingredients
- 500g Blackberries
- 2 1/2 tablespoons of Lemon Juice
- 30g Cold Butter Cubed
- 120 ml Water
- 4 Teaspoons Baking Powder
- 1 Teaspoon of Salt
- 250 Plain Flour
- 75g Cold Lard Cubed
- 1 1/2 Tablespoons of Caster Sugar
- 2 1/2 Tablespoons of Milk
Method
Pre-heat the oven to Gas 8, 230 centigrade. Place the blackberries in buttered pie dish and sprinkle with a little sugar. Sprinkle over the lemon juice and distribute the cubed cold butter amongst the blackberries.
Sift the baking powder, salt and flour into a large bowl. Add the cubed lard and rub together lightly. Add the sugar and milk and mix together into a smooth dough that leaves the bowl clean.
Roll out the dough on a floured surface large enough to cover the fruit. Place the dough over the top of the fruit and trim the edges off. Prick the surface all over with a fork.
Bake in the oven for 15 minutes and then reduce the heat to Gas 4, 180 centigrade and cook for a further 30 minutes.
